Another centerpiece idea would be to buy a goldfish bowl, a couple of goldfish, a mirrored tile to place them on with small votive candles nearby to shimmer off the tile. You can donate the fish to grade schools after you are done with them. The cost of this is typically less than $10 per table.
See if anyone else has scheduled the space prior to you or after you and then talk to that couple to see if you can come to a compromise on the flower design and flower choices. If you were able to see eye to eye, then the costs could be divided and a lot of money could be saved.
Don't book your wedding near a holiday. Roses near Valentines Day are ridiculous in price and therefore it would cost you more to have a wedding at that time of year. Same for Mother's Day, etc.

Make sure you ask to see reginal and seasonal flowers from your region and from your season. Sometimes you have to check out both. Sometimes a flower from your region may be very inexpensive, but since it is out of season, the price doubles or triples.
